Scooping Rocky road ice-cream out of an AMC cake tin

This recipe is so easy that it doesn't even need an ingredients list! If you want to impress without the effort, then this desert is a must. Traditionally made with chocolate ice cream, nuts and marshmallows, we've glammed ours up a bit by adding some berries and crushed meringues - mouth-watering goodness! 

Rocky Road Ice cream

Serves 10 -12

  1.  Mix 2 litres of softened strawberry ice-cream with 200 g mixed berries (fresh or frozen), about 10 romany cream biscuits (150 g) and 6 meringues, broken into smaller chunks. Place in an AMC 20 cm Cake Tin, cover with cling wrap and freeze till hard. Serve scoops of ice-cream in cones or bowls.
 
Variations
Use any ice-cream flavour of your choice and flavour with 2 or 3 of the following: 
  • crushed nuts
  • cubes of nougat
  • crushed peanut brittle
  • small marshmallows
  • pieces of chocolate
  • spoons of caramel
  • raisins soaked in rum
